The team at the restaurant Isla de Lobos, belonging to the Princesa Yaiza Hotel, comprising chefs Paolo Soggiu and Bruno Rosa, has recently won the 1st Canary Islands Team Cooking Championship, defending Lanzarote cuisine.
The final round of the championship took place at the Hotel School of Santa Cruz (Tenerife) on 19 October, where the team of Isla de Lobos competed with the following dishes:
- Almond milk "torrijas" with ice plant honey.
- Partridge "salmorejo."
- John Dory with limpets and Canaries brown crab sauce.
The jury – which had already chosen Soggiu and Rosa as champions of Lanzarote in previous round – declared the team the overall winner of the championship in the final.

Isla de Lobos, a pioneering restaurant in Lanzarote for having introduced the slow food concept, is committed to protecting the island’s products, using organic and traditional produce in the elaboration of its dishes, coming directly from the island’s farms to the table.
This award is yet another acknowledgement of the splendid work of the Princesa Yaiza Hotel’s kitchen staff which, captained by executive chef Carlos Perez Redondo, have also been nominated for the Gran Hotel Awards in the category "Best Hotel Cuisine," whose ceremony took place in Barcelona on 3 November.
