From 10-12 September, the Princesa Yaiza Suite Hotel & Resort (Lanzarote) will host a special haute cuisine event at its gourmet restaurant Isla de Lobos, featuring the creations of Michelin star chef René Mathieu.
From Thursday-Saturday (10-12 September), hotel guests, locals and visitors to the island will be able to enjoy a world-class gastronomic experience, with a menu designed by the Belgium chef René Mathieu, well-known in the world of haute cuisine for having obtained a Michelin star for his 20-year track record at the restaurants Le Capucin Gourmand (16 years) and La Distillerie (since 2012), both located in Belgium.
Mathieu’s work is basically characterized by a perfect combination of original cuisine with traditional dishes, plus his very special touch. Furthermore, the menu that he has designed for the occasion blends his knowledge with the local produce of the Canary Isles, in collaboration with the restaurant’s team, captained by the chef Joao Henrique Faraco and the Princesa Yaiza Hotel’s executive chef Victor Bossecker.
The tasting menu, which costs €55 per person without drinks and €80 per person with a special selection of wines, features the following dishes:

Avocado carpaccio with prawns, pomegranates, herbs and flowers

Canaries rock fish roasted with an emulsion of herbs and aniseed, black sesame seeds, green asparagus and candied melon

Mango, green apple, passion fruit and coconut

Uga suckling pig with hay and sage, gnocchi, courgettes, dates and smoked milk emulsion

Flavours of demi-sec wine… pineapple, liquorice, pear and honey with a tinge of bitterness
